Stuffed Peppers

•   Ingredients

•   1 cup rice

•   2 cup water

•   12 oz ground meat of choice (beef, turkey, veggie meat)

•   1 cup mushrooms, sliced

•   3 cloves garlic, minced

•   1 jar (24 oz) tomato sauce

•   2 cups spinach

•   1 tsp dried oregano

•   2 tsp chili powder

•   Salt and pepper to taste

•   6 bell peppers

•   Shredded cheddar jack cheese to top

•   Steps

1.     Preheat oven to 400ºF

2.     Boil water in pot and cook rice according to package instructions

3.     Cook choice ground meat in large pan on medium heat until browned, chopping it up throughout (varies by type of meat)

4.     Heat smaller pan to medium heat with drizzle of olive oil

5.     Chop garlic and mushrooms while smaller pan is heating up

6.     Once warm, add mushrooms and garlic to smaller pan and sauté until browned and soft

7.     Add tomato sauce to meat and simmer

8.     Add rice and mushrooms to the large pan with meat

9.     Add spinach to large pan until softened and cooked

10.  Mix in seasonings in large pan until combined

11.  Clean out bell peppers

12.  Place bell peppers on baking dish (9x13 in recommended), open side up, and evenly distribute filling in each pepper

13.  Add preferred amount of shredded cheese to top off each bell pepper

14.  Cover pepper with foil

15.  Bake until peppers are tender, about 35 min

Uncover peppers, then place back in oven and bake another 10 min uncovered
