Southwest Pulled Chicken Salad
INGREDIENTS:
2 lbs boneless, skinless chicken thighs
1 package pulled chicken seasoning (ingredients to make seasoning according to package)
1 avocado (sliced or chopped)
1/4 cup of red onion (diced)
1 cup of cherry tomatoes (halved)
1 cup of black olives (halved)
1 cup of chopped cucumber
1 can low sodium black beans
1 can low sodium whole coronel corn
1 package lettuce leaves (torn in bite sized pieces)
1 cup of Hidden Valley Ranch dressing
1/4 cup of BBQ sauce (your choice)
INSTRUCTIONS:
Mix the ranch dressing and BBQ sauce into small bowl and set aside
Place chicken thighs and prepared pulled chicken seasoning into a pressure cooker or crock pot (cook according to appliance directions)
Put remainder of ingredients into a large salad bowl, mix to combine
Once chicken is cooked, remove to a cutting board and shred using 2 forks
Serve allowing individuals to prepare their own salads, topping with the chicken and mixing their own dressing
