Southwest Pulled Chicken Salad

INGREDIENTS:

  • 2 lbs boneless, skinless chicken thighs

  • 1 package pulled chicken seasoning (ingredients to make seasoning according to package)

  • 1 avocado (sliced or chopped)

  • 1/4 cup of red onion (diced)

  • 1 cup of cherry tomatoes (halved)

  • 1 cup of black olives (halved)

  • 1 cup of chopped cucumber

  • 1 can low sodium black beans

  • 1 can low sodium whole coronel corn

  • 1 package lettuce leaves (torn in bite sized pieces)

  • 1 cup of Hidden Valley Ranch dressing

  • 1/4 cup of BBQ sauce (your choice)

INSTRUCTIONS:

  1. Mix the ranch dressing and BBQ sauce into small bowl and set aside

  2. Place chicken thighs and prepared pulled chicken seasoning into a pressure cooker or crock pot (cook according to appliance directions)

  3. Put remainder of ingredients into a large salad bowl, mix to combine

  4. Once chicken is cooked, remove to a cutting board and shred using 2 forks

  5. Serve allowing individuals to prepare their own salads, topping with the chicken and mixing their own dressing

  6. Enjoy
