Peanut Soba Noodles

INGREDIENTS:
• 14 oz soba noodles
• 8 oz coleslaw blend
• 8-12 oz protein of choice (chicken, shrimp, tofu, etc.)
• 2/3 cup peanut butter
• 5 tbsp low sodium soy sauce
• 4 tbsp rice vinegar
• 4 tbsp maple syrup
• 2 tbsp sriracha (more or less to taste)
• 2 tbsp lemon or lime juice
• 4 tbsp warm water
INSTRUCTIONS:
1. Boil pot of water and cook Soba noodles according to package and drain
2. Heat a pan to medium and pour in some olive oil
3. Prepare/chop protein of choice as needed
4. Add protein of choice to pan and begin to cook, flipping as needed
5. While protein and noodles are cooking, combine remaining ingredients in bowl and whisk to create a peanut sauce. Sriracha amount can be altered or omitted depending on your family’s spice preference!
6. Once protein is nearly done cooking, add the coleslaw blend and cook until softened and lightly browned
7. Once protein and coleslaw are cooked, add soba noodles and peanut sauce to pan
8. Stir ingredients in pan until thoroughly combined and sauce has thickened
9. Serve hot!
