Leftover City- Steak

INGREDIENTS:

  • Leftover Steak (cut into bite sized pieces)

  • 1/2 bag of frozen hashbrowns (thawed)

  • Olive Oil

  • 1-2 tbsp Butter

  • 1/2 onion (diced)

  • Assorted Peppers (diced)

  • 8-10 Large Eggs

  • Salt and Pepper to taste

  • Tortilla Shells

  • Cheese (your choice)

INSTRUCTIONS:

  1. In a pan, place olive oil and add the hashbrowns, cooking per package directions

  2. In another pan, melt 1-2 tbsp of butter and add the diced onion and the diced peppers

  3. Cook the onions and peppers until soft, then remove from pan with a slotted spoon

  4. In the same pan, add the meat, stirring constantly

  5. When heated through, remove the meat from the pan

  6. In a third pan (sorry I know it’s a lot of dishes), add a small pad of butter and the beaten eggs

  7. Cook until the eggs are scrambled and finished (adding salt and pepper to taste)

  8. Warm the tortilla shells in the microwave per package directions

  9. Set up a self-serve burrito feast by placing everything in separate bowls and allow everybody to build their own

  10. Enjoy!
