“It’s All Greek To Me” Chicken
INGREDIENTS:
2 lbs boneless, skinless chicken thighs
1 jar of green olives (drained)
1 can of black olives (drained)
1 cup of Kalamata olives (drained)
2 lemons (sliced)
1 cup of chopped roasted red peppers
1 can of artichoke hearts (drained)
2 cups of chicken broth (low sodium)
2 tbsp of Greek seasoning
INSTRUCTIONS:
Place all ingredients in a crockpot and cook on high for 5-6 hours
Serve with toasted Naan bread rounds and tzatziki sauce
