“It’s All Greek To Me” Chicken

INGREDIENTS:

  • 2 lbs boneless, skinless chicken thighs

  • 1 jar of green olives (drained)

  • 1 can of black olives (drained)

  • 1 cup of Kalamata olives (drained)

  • 2 lemons (sliced)

  • 1 cup of chopped roasted red peppers

  • 1 can of artichoke hearts (drained)

  • 2 cups of chicken broth (low sodium)

  • 2 tbsp of Greek seasoning

INSTRUCTIONS:

  1. Place all ingredients in a crockpot and cook on high for 5-6 hours

  2. Serve with toasted Naan bread rounds and tzatziki sauce

  3. Enjoy!
