Italian Chicken w/Antipasto Pasta Salad

INGREDIENTS:

  • 4 boneless, skinless chicken breasts

  • 1/2 cup of Italian dressing (chicken)

  • 2 boxes Tricolor Rotini pasta

  • 1 jar marinated mushrooms

  • 1/2 cup of green olives

  • 1/2 cup of kalamata olives

  • 1 can of artichoke hearts (quartered)

  • 1/2 cup of roasted red peppers (chopped)

  • 1/2 salami or pepperoni (bite-sized pieces)

  • 1/2 cup fresh mozzarella (bite-sized pieces)

  • 1/2 cup of Italian dressing (salad)

INSTRUCTIONS:

  1. Preheat grill or oven to 350 degrees

  2. Place chicken in Ziplock bag and add 1/2 cup of Italian dressing

  3. Flip the bag periodically while making the salad

  4. Cook noodles in boiling water per package directions and drain under cold water

  5. Place noodles in bowl and add the remaining ingredients, tossing until well covered with the dressing

  6. If necessary, add more dressing

  7. Cook the chicken until cooked through (165 degrees)

  8. Serve the chicken breast with the pasta salad
