Italian Beef and Meatball Bowls

INGREDIENTS:

  • 1 1/2 chuck roast

  • 1 bag of meatballs (25)

  • 1 32 oz container of beef stock

  • 1 bay leaf

  • 2 tbsp Italian seasoning

  • 1/4 cup of grated Parmesan cheese

  • 1 small onion (sliced)

  • 1 jar of spaghetti sauce

  • 1 box of ditalini pasta

  • shredded Italian cheese (as much as you want)

  • 1 package of frozen zucchini and squash

  • Balsamic Vinaigrette

INSTRUCTIONS:

  1. In a crockpot, place the beef, the beef broth, the bay leaf, the sliced onion, the Italian seasoning and the Parmesan cheese

  2. Cook on high for 4-6 hours

  3. Cook the meatballs in the oven at 350 degrees for 25 minutes

  4. Place the meatballs in a pan and cover with the spaghetti sauce

  5. When beef is done, remove to a cutting board and shred, then place back into crockpot to keep warm

  6. Cook the ditalini noodles according to package directions

  7. Cook the frozen zucchini and squash according to package directions, drizzle with dressing if desired

  8. Allow everyone to assemble their own bowls with the pasta, the beef, the meatballs and the cheese

  9. Enjoy!
