Fulla Veggies Bolognese

INGREDIENTS:

  • 1 lb ground beef

  • 3/4 cup of grated carrots

  • 3/4 cup of chopped celery

  • 1/2 cup of chopped white onion

  • 1 cup of baby spinach leaves

  • 1/4 cup of basil leaves (torn)

  • 1 jar spaghetti sauce (24 oz)

  • 1 box rotini noodles

For Salad:

  • 1 package Gotham Greens pullman lettuce leaves

  • 1 seedless cucumber (peeled and chopped)

  • 1 cup of cherry tomatoes (cut in half)

  • 1/2 package fresh mozzarella pearls (2 oz)

  • 1/4 cup of sliced red onion

  • Balsamic Vinaigrette

INSTRUCTIONS:

  1. In a pot of water, cook the rotini noodles per package instructions and set aside

  2. In a pan, place 2 tbsp of butter, add in carrots, celery and onion and sauté until tender

  3. Add in ground beef, chop and cook until cooked through

  4. Add the sauce and simmer until heated through

  5. Stir in the basil and baby spinach, cooking until wilted

  6. Add the rotini noodles, stir until combined

  7. For the salad, mix all ingredients together and toss until completely mixed

  8. Enjoy
