Eggy Grilled Cheese and Tomato Soup
INGREDIENTS:
12 eggs
1 cup of cheese
1/4 cup of bacon bits
Any veggies you would like
1 family sized can of Campbells healthy request tomato soup
8 slices of good thick bread
4 slices Muenster cheese
4 slices of Cheddar cheese
1/2 stick of butter (use what you want for grilling)
INSTRUCTIONS:
Preheat the oven to 350 degrees
Whisk the 12 eggs, stir in 1/2 cup of cheese
In a large sheet pan, spray with PAM, then add a piece of parchment paper and spray that as well
Pour the eggs onto the pan and sprinkle top with the bacon bits and remaining cheese
Bake in oven for 12-14 minutes until completely set
Remove from oven and set aside
Heat up electric griddle or frying pan, grease bottom
Assemble sandwiches as such: 1 slice of bread, 1 slice of cheese, the egg bake (cut to fit bread), 1 slice of cheese and 1 slice of bread
Fry on griddle or frying pan until golden brown and cheese is melted
In a pot, make the tomato soup according to directions on can
