Eggy Grilled Cheese and Tomato Soup

INGREDIENTS:

  • 12 eggs

  • 1 cup of cheese

  • 1/4 cup of bacon bits

  • Any veggies you would like

  • 1 family sized can of Campbells healthy request tomato soup

  • 8 slices of good thick bread

  • 4 slices Muenster cheese

  • 4 slices of Cheddar cheese

  • 1/2 stick of butter (use what you want for grilling)

INSTRUCTIONS:

  1. Preheat the oven to 350 degrees

  2. Whisk the 12 eggs, stir in 1/2 cup of cheese

  3. In a large sheet pan, spray with PAM, then add a piece of parchment paper and spray that as well

  4. Pour the eggs onto the pan and sprinkle top with the bacon bits and remaining cheese

  5. Bake in oven for 12-14 minutes until completely set

  6. Remove from oven and set aside

  7. Heat up electric griddle or frying pan, grease bottom

  8. Assemble sandwiches as such: 1 slice of bread, 1 slice of cheese, the egg bake (cut to fit bread), 1 slice of cheese and 1 slice of bread

  9. Fry on griddle or frying pan until golden brown and cheese is melted

  10. In a pot, make the tomato soup according to directions on can
