Chili
INGREDIENTS:
2 lbs of lean ground beef
1 16 oz can diced tomatoes
1 large can tomato puree
1 cup grated zucchini
1/2 cup grated onion
1/4 cup chili powder
1/2 tsp cumin
chipotle powder to taste
1 tbsp garlic powder
red pepper flakes to taste
INSTRUCTIONS:
Cook the ground beef in a large pan and drain the fat if necessary
Add the grated zucchini and onions, cooking and stirring for a minute or 2
Add in the tomatoes and the puree, stirring until completely mixed through
Add in all the seasonings, stirring until mixed
Simmer for about 5 minutes on medium to low heat, just to let the flavors blend
If it seems too thick, add a little water, maybe 1/2 cup at a time
If desired, serve with cornbread, either homemade or store bought
If desired, you can make it chili mac by adding cooked macaroni and some cheddar cheese
