Chili

INGREDIENTS:

  • 2 lbs of lean ground beef

  • 1 16 oz can diced tomatoes

  • 1 large can tomato puree

  • 1 cup grated zucchini

  • 1/2 cup grated onion

  • 1/4 cup chili powder

  • 1/2 tsp cumin

  • chipotle powder to taste

  • 1 tbsp garlic powder

  • red pepper flakes to taste

INSTRUCTIONS:

  1. Cook the ground beef in a large pan and drain the fat if necessary

  2. Add the grated zucchini and onions, cooking and stirring for a minute or 2

  3. Add in the tomatoes and the puree, stirring until completely mixed through

  4. Add in all the seasonings, stirring until mixed

  5. Simmer for about 5 minutes on medium to low heat, just to let the flavors blend

  6. If it seems too thick, add a little water, maybe 1/2 cup at a time

  7. If desired, serve with cornbread, either homemade or store bought

  8. If desired, you can make it chili mac by adding cooked macaroni and some cheddar cheese

  9. Enjoy!
