Chicken and Waffles

INGREDIENTS:

OVEN FRIED CHICKEN:

  • 8-12 chicken thighs (boneless, skinless)

  • 1 cup All-purpose flour

  • 1 cup Italian bread crumbs

  • 3 eggs

  • 1/2 vegetable oil

  • Paprika

  • Salt and Pepper

WAFFLES:

  • 2 cups All-purpose flour

  • 1/2 cup of sugar

  • 3 1/2 tsp baking powder

  • 2 large eggs (room temp. and separated)

  • 1 1/2 cups of milk

  • 1 cup butter (melted)

  • 1 tsp Vanilla

INSTRUCTIONS:

  1. Preheat oven to 350 degrees

  2. In 3 separate shallow bowls, place flour, salt and pepper in 1

  3. Place the 3 eggs, whisked, in the second bowl

  4. Place the bread crumbs in the third bowl

  5. Pour the oil into a large baking dish

  6. Coat the chicken first in the flour, then in the egg and finally in the bread crumbs

  7. Place the chicken side by side in the baking dish and sprinkle Paprika over the top

  8. Bake in the oven for 30 minutes, then turn the pieces over and bake for another 30 minutes

  9. Place the cooked chicken pieces on some paper towels to drain

  10. While chicken is cooking, combine the flour, sugar and baking powder in a bowl

  11. In a separate bowl, whisk the eggs yolks, the milk, the melted butter and the vanilla

  12. Beat the egg whites until stiff peaks form (meringue)

  13. Mix the wet ingredients into the dry, stirring until combined

  14. Fold the meringue into the batter carefully to combine

  15. In a preheated waffle maker, follow manufacturer’s instructions to cook your waffles

  16. Place the chicken pieces over the waffles and add syrup of choice

  17. Enjoy!
