Breakfast for Dinner

INGREDIENTS:

  • 1 dozen large eggs, divided

  • 2 cups of milk, divided

  • 1 chub of breakfast sausage

  • 1 package fresh hashbrown potatoes

  • 1 tsp of minced onion

  • 1/2 cup of diced peppers

  • 8 slices of day old bread

  • 1 cup of berries

  • Maple Syrup

  • Butter

  • 1 1/2 cups of cheese

INSTRUCTIONS:

  1. Preheat oven to 350 degrees

  2. In a bowl, whisk 8 eggs and 1 cup of milk and minced onion (salt and pepper to taste)

  3. In a pan, spray a little cooking spray and cook sausage until done, adding the peppers in halfway through

  4. Remove sausage and add tbsp of butter

  5. Place hashbrowns in pan and just brown them, about 5 minutes, stirring constantly

  6. Combine the sausage, the hashbrowns and a cup of cheese. Place into greased baking dish, pour the egg mixture over the top and sprinkle remaining 1/2 cup of cheese on top

  7. Bake in the oven for 35 minutes

  8. In the meantime, in a separate bowl, add the 4 remaining eggs and the cup of milk, sprinkle in a little sugar and a dash of vanilla, whisk it together and set aside

  9. Dip each piece of bread into the egg/milk mixture and place on a griddle, cooking until both sides are golden brown

  10. Serve 2 slices of French Toast and 1/8 of the egg bake, along with 1/2 cup of fruit of your choice

  11. Enjoy
