Berry Good Salad w/Chicken

INGREDIENTS:

  • 4 chicken breasts (boneless and skinless)

  • 1 bottle poppyseed dressing

  • 1 pint of strawberries (hulled and sliced)

  • 1 cup of blueberries

  • 1/2 cup of red onion (sliced)

  • 1 can of pineapple tidbits (drained)

  • 4-6 cups of lettuce (Romaine and mixed greens)

INSTRUCTIONS:

  1. Preheat the grill

  2. Season the chicken with salt and pepper

  3. Cook chicken on grill until done

  4. After removing from grill, let the chicken rest for a few minutes and slice into manageable pieces

  5. Put the lettuce into a large salad bowl

  6. Add the fruit, the chicken and the onions to the salad bowl, mixing until combined

  7. Top with the dressing

  8. Serve with dinner rolls if desired
