30 Minute Fried Rice

INGREDIENTS:

•   5 tbsp olive oil

•   10-12 oz protein choice (chicken, shrimp, tofu, etc.)

•   20 oz frozen rice with mixed vegetables (2 packs of Bird’s Eye rice with corn, peas, and carrots is great!)

•   2 eggs

•   6 tbsp low sodium soy sauce

INSTRUCTIONS:

1.     Heat large pan with 2 tbsp of the olive oil over medium heat

2.     Prepare/chop protein of choice as needed, and add to the pan to flip as needed

3.     As protein cooks on pan, place frozen bags of rice and vegetables in microwave and cook according to packaged instructions one by one

4.     Once packages of rice and vegetables finish in microwave, add contents to the large pan with protein

5.     Add remaining olive oil to pan and stir ingredients to combine.

6.     Once combined, move food in pan to the side to make room for the eggs. Add both eggs to the pan and scramble separately before incorporating with rest of ingredients in pan

7.     Add soy sauce to pan, and mix ingredients together

8.     Allow food to cook in pan for about 5 minutes or until brown, then flip ingredients to cook the other side for same amount of time

Serve fried rice with desired sides, include some orange slices for a source of fruit!
